I feel silly even calling this a recipe because it is so simple. I
mean, really, it’s just roasted fruit. This can be adjusted in a myriad
of ways I am sure–so have at it.
4 or 5 peaches
maple syrup and cardamom to taste (I used a few tablespoons of syrup and a teaspoon or so of cardamom)
coconut milk, ice cream, whipped cream or greek yogurt for serving
>Preheat oven to 400°F
>Cut peaches in half and discard pits. Place peaches cut side up in a
baking dish and sprinkle with cardamom (as much or as little as you
like). Drizzle with ample amounts of maple syrup.
>Roast until tender, about 20 to 30 minutes. Serve warm with coconut
milk, ice cream or yogurt. Drizzle reaming syrup from pan over
finished dessert. Enjoy!
