2/3 cup pure maple syrup
1/2 cup quick-cooking oats
1/2 cup non-fat dry milk
1/2 cup toasted sunflower seeds
1/3 cup all-purpose flour
2 large eggs
1/2 cup dried blueberries or cranberries
1/2 cup dried apricots, chopped
1/2 cup sliced almonds
1/2 cup shredded coconut
Preheat oven to 350 degrees F. Spray a 9 x 9-inch baking pan with cooking spray. Combine maple syrup, oats, milk powder, sunflower seeds, flour, and eggs in a food processor. Puree until almost smooth, about 10 seconds. Stir in blueberries, apricots and almonds. Turn into prepared pan. Sprinkle with coconut.
Bake 20 to 25 minutes or until edges are golden brown and bars are set.
