Maple Syrup Squares


  

 Ingredients:

Base:
1 cup flour
1/4 cup white sugar
1/2 cup butter or margarine

Maple syrup filling:
3/4 cup packed dark brown sugar
1 cup maple syrup (preferably dark amber)
2 eggs (already beaten)
2 tbsp. flour
1/4 cup butter or margarine
1/4 tsp. salt
1/2 tsp. vanilla
2/3 cups pecans (optional, just as delicious without)

Directions:

Preheat oven to 350 degrees.

Base:
Mix base ingredients (like shortbread) and bake in a square pan for 5 minutes at 350 degrees. Cool.

Filling:
Combine brown sugar and maple syrup in a pot over stove and let simmer for 5 minutes. Cool completely. Pour in eggs when cooled and stir in remaining ingredients. Pour over shortbread and top with pecans (optional). Heat oven to 450 degrees and bake for 10 minutes and then reduce to 350 degrees for 20 minutes. Base should be golden when done.

P.S. It tastes even better when cooled down and refrigerated a little bit, the maple syrup flavors come out and it's even better the next day- try to resist :)
