Maple/Whiskey Glazed Salmon

(Serves 6)

Ingredients:

Marinade:

1/2 cup (125 ml) maple syrup

1/4 cup (50 ml) whiskey or bourbon

1 tbsp. (15 ml) soy sauce

1 tsp. (5 ml) chili paste

1 clove garlic, crushed

6 - 6 oz. (175 g) salmon filets

Directions:

1. Make the marinade by combining the maple syrup, whiskey, soy sauce, chili paste and garlic in a bowl. Pour into a large zip-lock plastic bag. Add salmon fillets, seal bag and place in a shallow baking dish in the fridge 30 minutes, turning the bag once.

2. Remove filets from bag and place the marinade in a small bowl.

3. Cook the salmon on a preheated, greased gas grill for about 10 to 12 minutes, brushing with remaining marinade. The salmon will start to form small white beads on the side when cooked.

(You can also cook in a 400 F. oven on a baking sheet for the same amount of time).

Place salmon on a platter.
