MAPLE-GLAZED CHICKEN WINGS


 

Makes about 40 chicken wings

Fit for a small crowd of 10 to 12 people, depending on what else is on the menu, start this a day ahead and just bake on game day.

3 cups buttermilk

1 cup maple syrup

1-1/2 cups orange juice

1 teaspoon grated orange peel (optional)

1 teaspoon cinnamon

5 pounds chicken wings, about 35-40

Whisk together buttermilk, maple syrup, juice, and cinnamon in a large non-aluminum bowl.

Add the chicken wings to the bowl and turn to coat. Cover tightly and refrigerate overnight, 8 to 24 hours, turning to further coat whenever you think of it.

Preheat the oven to 400 degrees.

Line 2 or 3 baking sheets with parchment paper so that food does not stick to the pan. Place wings on the baking sheets in a single layer. Bake, turning every 5 to 7 minutes, for 15 minutes. Brush with the marinade at this point, then discard any remaining marinade. Bake, for 15 to 20 minutes longer until golden brown.
