Maple Apple Oatmeal Raisin Muffins



SERVES:
makes 12 small muffins

INGREDIENTS:

1 cup all-purpose flour
1/3 cup whole wheat flour
1 cup quick cooking oats
1/4 cup wheat germ
1 Tbs baking powder
1/2 tsp kosher salt
1 tsp ground cinnamon
1/2 cup raisins

1/2 cup milk (plus 2 - 3 Tbs for a lighter batter)
1/3 cup real maple syrup
1/3 cup unsweetened apple sauce
2 Tbs vegetable oil
1 large egg

PROCEDURE:

Preheat the oven to 400 degrees and also grease one 12-cup muffin pan.

Use a large mixing bowl to combine 1 cup all-purpose flour with 1/3 cup whole wheat flour, 1 cup quick cooking oats, 1/4 cup wheat germ, 1 Tbs baking powder, 1/2 tsp salt, 1 tsp ground cinnamon and 1/2 cup raisins and mix to combine.

Use a 2 cup measuring cup to combine 1/2 cup milk with 1/3 cup real maple syrup, 1/3 cup unsweetened apple sauce, 2 Tbs vegetable oil and 1 large egg and whisk it up.

Make a well in the center of the dry ingredients and add the wet ingredients and gently fold those together until they're just combined....trying not to overwork it.

Use a level 1/4 cup measure to scoop the batter into the prepared pan and place that onto the center rack of the preheated 400 degree oven.

They'll take around 15 - 17 minutes to bake.....use a toothpick to check them for doneness.

HINTS:

These are a bit on the dense side...you can add a little more milk to loosen up the batter a bit.
