Slow Cooker Apple and Maple Pulled Pork

Ingredients:
3 lbs pork butt, rinsed and trimmed
1 cup apple cider vinegar
1/2 teaspoon ground mustard
1/2 teaspoon Paprika
1/2 large red onion, diced
1 Granny Smith apple, peeled, cored, and diced
1/2 cup pure maple syrup
3 tablespoons Maple seasoning

Directions:
Place the pork into the center of a slow cooker.
Pour the apple cider vinegar around the pork.
Sprinkle the mustard and Paprika on the pork.
Add the onion and apple pieces into the pot. Be sure to leave some of the pieces on top of the pork.
Pour the maple syrup over the pork.
Sprinkle the seasoning mix over the top of the pork.
Put the lid on the slow cooker and cook on low for 6-8 hours or on high for 4 hours or until fully cooked.
Take two forks and pull apart the pork. Allow the pork pieces to simmer in the juice for 10 minutes.
Serve either alone or on a roll. Be sure to use a slotted spoon when serving the pork in order to allow some of the juices to drain. Feel free to add cole slaw if you're serving as a sandwich.
