Maple Glazed Waffle Egg Sandwich

Get the kids off to a fun start with this special breakfast.

Whisk 1 cup confectioners’ sugar, 6 Tbsp maple syrup, and 1 pinch cayenne pepper in a pie plate. Dip 1 side of 8 prepared, cooled waffles* in maple glaze, let excess drip off, then place on a rack to dry, glaze side up, about 45 minutes. (This can be done the night before.) Put 4 waffles on 4 plates, glaze side up. Cook 12 mini turkey sausage patties until heated through; divide among waffles. Fry 4 eggs in a nonstick skillet over medium-high heat to desired doneness (2 to 3 minutes for runny yolk and crisp edges); top each sandwich with 1 fried egg. Set remaining waffles into place, glaze side down. Makes 4.

*You can use frozen toaster waffles or homemade waffles for this kid-friendly morning treat.
