Fresh Berries, Yogurt, Granola and Maple Flakes


Fresh Berries and Maple Flakes

A summer favourite...fresh berries, yogurt, homemade granola and a sprinkling of maple flakes.  My family enjoys this for breakfast and for dessert!

Ingredients:

1/3 cup low-fat plain yogurt

1/3 cup fresh mixed berries

1 tsp maple syrup

1 Tbsp homemade granola (recipe below)

Maple flakes or maple cube to sprinkle on top

Instructions:

Fill a small bowl with yogurt and berries.  Drizzle 1 tsp of maple syrup over the berries. Add a few spoonfuls of homemade granola.  Sprinkle maple flakes or grate a maple cube over top.  Enjoy!

 

Homemade Granola:

Ingredients:

4 cups old-fashioned rolled oats

1 1/2 cups slivered almonds

1 cup shelled, unsalted pistachios

1 cup unsweetened coconut chips

1 tsp kosher salt

1 tsp ground cinnamon

1 tsp ground cardamom

1 tsp ground ginger

1/4 cup flax seed

1/2 cup maple syrup

3 Tbsp olive oil

1/4 cup finely diced candied ginger

Instructions:

1) Preheat oven to 350 degrees. Line a large rimmed baking sheet with parchment paper. Set aside.

2) In a large bowl, combine oats, almonds, pistachios, coconut, cinnamon, salt, ginger, flax seed and cardamom.  Add the maple syrup, and oil and stir well.

3) Spread granola onto prepared baking sheet. Bake until just starting to turn golden, about 15 minutes.  Turn off the oven.  Stir the granola mixture, return to the oven, and close the door.  Let the granola sit in the oven 6 to 12 hours.

4) Transfer the granola to a large bowl, breaking up any large clumps.  Stir in the candied ginger and serve.  Store in an airtight container for up to a month.
